Biscoff & Vanilla Bean Gelato Bars

Ingredients:

    •    1 tub Vanilla Bean Gelato

    •    ¾ tub Biscoff Spread

    •    1 packet Biscoff Biscuits

Method

    1    Prepare the base:

  •  Line a silicone baking tray with approximately 6 Biscoff biscuits in a single layer.

    2    Melt the Biscoff spread:

  • In a microwave-safe bowl, melt about half of the Biscoff spread (3/4 of the tub) until smooth and pourable.

Pour the melted spread over the biscuits and gently spread it out.

  • Place the tray in the fridge for about 5 minutes to allow the layer to set.

    3    Add the first gelato layer:

  • Spread half of the Vanilla Bean gelato over the chilled Biscoff layer.

    4    Add a middle Biscoff layer:

  •  Pour another layer of melted Biscoff spread over the gelato (use about half of what’s left).

    5    Add the final gelato layer:

  •  Spread the remaining gelato on top.

  •  Use a spatula to flatten and smooth the surface.

    6    Top it off:

  •    Drizzle the remaining Biscoff spread over the gelato.

  •   Add a final layer of Biscoff biscuits on top.

    7    Freeze:

  •  Freeze the tray for at least 3 hours or until fully set.

    8    Serve:

  •   Cut into bars or squares, serve, and enjoy!
