Marvellous Creations Gelato Cake

Ingredients:

    •    Chocolate gelato

    •    Red frogs or lollies of your choice

    •    Biscoff biscuits, crushed

    •    Mini marshmallows

    •    Crushed peanuts

    •    Desiccated coconut

    •    Lamingtons, sliced


Method:

    1    Line a baking tin or tray with baking paper and set aside.

    2    Remove the chocolate gelato from the freezer and let it soften for 3–5 minutes.

    3    In a large mixing bowl, combine the softened gelato with lollies, crushed Biscoff biscuits, mini marshmallows, crushed peanuts, and desiccated coconut.

    4    Gently fold everything together until well mixed.

    5    Pour the mixture into the prepared baking tin.

    6    Press a layer of sliced lamingtons on top to form the base of the cake.

    7    Freeze for 3–4 hours, or until firm.

    8    Once frozen, remove from the tin, flip onto a serving tray, and sprinkle extra desiccated coconut on top.

    9    Slice and enjoy!
